Gran's Meatloaf


Directions:
   Place hamburger in a bowl and add onion, bell pepper, cheese, crackers, eggs, and soup. Mix until just combined (careful not to over mix). I like mixing by hand so I have more control, if this grosses you out use a glove or fork. 


You can form it into one big loaf or several smaller loaves. Top each loaf with a strip(s) of bacon and then brush with ketchup. 


Bake in 350 degree oven for about an hour. smaller loaves may take less time. 


Brush with more ketchup after removing from oven and serve.

1 1/2 lbs hamburger

1 can cream of potato soup

2 eggs

6 crackers

6 oz cheddar cheese

Bacon 4-8 strips

Ketchup




Alright y'all...I know how most people feel about meatloaf. I was the same way for a long time. It's usually dry, under-seasoned, or just underwhelming. Not my Gran's recipe and I'm also happy to say.. not my adapted recipe (FOUND HERE). Her recipe always kept the meatloaf moist and will satisfy your craving for a home-cooked meal.
