Pork Tenderloin
(Marinade & Sauce)
Directions:
Mix marinade ingredients and submerge loins in marinade. I usually place them in a 7x11 pan, cover them with plastic wrap, and place them in the refrigerator. You will cook the loins in the marinade so its easiest to marinate in the same dish you plan to roast in.
Refrigerate for 8 hours or over night.
Place in 350 degree oven, uncovered, for 40-65 minutes (it really depends on the size of your loins).
Cook until the internal temperature reaches about 155-160 degrees. It is really important to rely more on the meat temperature and less on the time estimate with this recipe. It is very easy to overcook if you are not paying close attention.
To make the sauce: combine all ingredients and chill until ready to serve.
Ingredients:
Marinade:
2 cloves of garlic, crushed or minced
1/2 C soy sauce
2 Tb onion, minced
1/4 tsp pepper
1 Tb white vinegar
1/2 C water
Mustard Sauce:
1/2 C Mayonnaise
1/4 C sour cream
2 Tb brown mustard
2 Tb onion, chopped
1 tsp vinegar
salt & pepper to taste
Here's another recipe that came from my dad. This recipe is good for two loins and the mustard sauce is one of my favorites. Make sure you allow at least 8 hrs for the meat to marinate.
