Homemade Chili


Directions:
   Brown the beef and pork together in a skillet. Remove meat and drain the grease. In a large pot add the olive oil, chopped onion, minced garlic, chopped bell pepper, chopped jalapeño pepper, and parsley. Cook until onion is translucent stirring occasionally. Remove from heat and add chili powder, cumin, sugar, oregano, salt, pepper, and cayenne. Stir, then add meat, tomato juice, diced tomatoes, tomato sauce, and beans (if using). Place back on heat and bring to a boil. Turn down to low and simmer for about 2 hours. 


Top with your favorite chili toppings! 




Ingredients:

1 1/2 lbs ground beef (I use 90/10)

1/2 lb ground pork

4 TB extra virgin olive oil

1 large onion

1 bell pepper

4 cloves garlic

2 jalapeños

1/4 C fresh chopped parsley

3 TB chili powder

2 tsp cumin

1 tsp sugar

1 tsp dried oregano

1 tsp salt

1 tsp black pepper

1/4 tsp cayenne pepper

46 oz tomato juice

28 oz diced tomatos

15 oz tomato sauce

16 oz kidney beans

16 oz pinto beans

10 dashes favorite hot sauce (feel free to leave this out if you don't like it very spicy)



This is my go to chili recipe for those cold winter nights. I know there are two schools of though when it comes to beans in chili...this recipe has them...don't like them? Just leave them out. Happy simmering!
