Garlic Smashed Sweet Potatoes

Directions:
    Cut sweet potatoes into 1 1/2 inch pieces. I do not peel mine (i like the skin) but if you don't go ahead and peel before you cut them up. 
    Boil potatoes in a large pot of salted water for 20-25 minutes. Drain potatoes. 
     Lightly grease baking sheet with olive oil or nonstick spray. Arrange potatoes on baking sheet so none are touching. Lightly smash them with a fork. Mix together the melted butter, garlic, and parsley. Pour some over each potato. Sprinkle potatoes with salt and pepper. Lightly spray with nonstick spray or olive oil again. 
    Broil until golden brown and crispy (about 10-15 minutes). Remove from oven and sprinkle with parmesan cheese. Return to oven until cheese is melted. Season with a little more salt and top with parsley. 



Ingredients:

4 medium sweet potatoes

olive oil, or nonstick spray

3 TB melted butter

4 crushed garlic cloves

1 TB fresh parsley, chopped

salt and pepper

2 TB of parmesan cheese



We certainly love sweet potatoes in my house. It wasn't something I had much growing up but now that I've had them I just cant get enough. This is one of my favorite ways to prepare them. It takes a bit of time but it is well worth it.
