Cory's Chocolate Caramel Cookies
Directions:
Combine flour, cocoa powder, baking soda, baking powder, and salt. Set aside. Cream together the butter and sugar until light and fluffy. Beat in one egg at a time. Add vanilla. Gradually add the dry ingredients and beat together.
In a separate bowl combine the chocolate chips with the sweetened condensed milk. Microwave, stirring frequently, until chocolate melts.
Unwrap and cut 48 caramels in half. Shape dough into 1 inch balls. Press down the center and place a piece of caramel in the depression. Pipe or spoon the chocolate mixture over the caramel, covering it completely. Bake about 10 minutes until the edges are firm. Cool for a minute on the cookie sheet before transferring them to a wire rack to cool completely.

3 1/2 C flour
1 C cocoa powder
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 C butter
2 C sugar
2 eggs
1 Tb vanilla
2 C chocolate chips
14 oz sweetened condensed milk
48 caramels (cut in half)
These cookies are my husbands favorite and his second mom used to make them for him all the time. After we met she passed the recipe on to me so that I can make them for him anytime. This recipe makes a lot of cookies so you may want to cut it in half.
